BHEL PURI (INDIAN CRISPY RICE SALAD)

This bhel puri, or crispy rice salad, might just blow your mind. It's my dad's favorite street food and his favorite "special dish" to impress guests. His friends visit him weekly for a bowl of "Arka's superfood" so you can bet it's really that good. 

  • 1/4 cup of your favorite flavor of DAAL
  • 2 cups puffed rice 
  • 1 small potato, diced and boiled 
  • 1/3 cup tomato, finely diced
  • 1/4 cup red onion, finely diced
  • 1 green chili, finely chopped, optional
  • 1/3 cup roasted peanuts
  • 1/2 tsp chaat masala or lemon juice
  • 1/4 cup cilantro leaf, lightly chopped
  • tamarind chutney
  • cilantro mint chutney 
  • 1 tbsp roughly chopped cilantro

 

Finely dice potato, tomato onion, and green chili. Add these to a bowl with puffed rice, roasted peanuts, chaat masala and cilantro and mix. Add tamarind chutney and cilantro mint chutney, until coated evenly. Mix in your favorite flavor of DAAL and enjoy!
