ZINGY AVOCADO TOAST

 

Can't resist an avocado toast? This simple and savory dish is elevated for the spice lover. The standard dash of red pepper flake is replaced with a slice of real chili and Buffalo Chutney DAAL for some brightness and crunch. 

  • 1/4 cup Buffalo Chutney DAAL
  • 1 slice of your favorite bread, I prefer sourdough
  • 1/2 avocado, sliced 
  • 1 tbsp tomato, finely diced
  • 1 tbsp cucumber, finely diced
  • 1 slice lemon
  • 1 chili pepper of your choice, thinly sliced - My favorite is a slice of habenero, optional

 

Lightly mash avocado with lemon juice and salt. Spread it on your toasted sourdough. Top with cucumber, tomato and chili pepper. Sprinkle Buffalo Chutney Daal on top for a satisfyingly zingy crunch.

Yes, its vegan! 
Need more protein?: Add mashed chickpeas or diced grilled chicken and make it a sandwich
